Nothing goes together better than football and barbecues, whether you're firing up the grill outside Gillette or cooking in your own backyard.
If you need some new inspiration for your game day food, look no further. Executive chef and Boston sports fan Paul Wahlberg is sharing one of his famous burger recipes with Patriots Nation. "The Melt" is a gourmet take on the traditional cheeseburger and one of the many dishes Paul serves at Wahlburgers, the Hingham, Mass., restaurant he owns with brothers Donnie and Mark.
With this easy recipe, you can add a little bit of Wahlberg flair to your game day festivities, no matter where in the world you're watching.
Wahlburgers "The Melt" Recipe
- 1/4 to 1/2 lb ground beef - Wahlburgers suggests using a blend of short rib and ground chuck (makes 2-3 patties)
- 6 slices American cheese (3 slices for each Melt)
- 1 large yellow onion
- 12 slices dill pickle (6 slices for each melt) – Wahlburgers makes theirs in-house
- 4 slices crispy bacon
- 4 slices High Crown thick sliced white bread
Wahlburgers Mustard Sauce
- 3 Tbsp Hellman's Mayo
- 3 Tbsp French's Yellow Mustard
Season 5 oz patties with salt and pepper. Place the patties down on a Flat Top or BBQ grill and cook for 2.5 minutes.
While the patties are grilling, butter slices of High Crown thick sliced white bread, and place on grill for 2 to 2.5 minutes until golden brown.
While bread is on the grill, place 1 1/2 slices of Yellow American cheese on each slice of bread. Use only a total of 3 slices per Melt. Next, add 6 slices of dill pickle.
Flip the patties on the grill for an additional 2.5 minutes, season with salt and pepper. They should be cooked perfectly to medium.
Add caramelized onions. These can be prepared in advance of grilling. Sautee thinly sliced onions in pan with 90/10 blend canola and olive oil, seasoned with salt and pepper, stirring occasionally until onions are soft and sweet. Add 2 oz to top of each patty.
Add 2 slices of crispy bacon in an X pattern on top of caramelized onions.
Remove slices of bread from the grill. Spread 1 oz of homemade mustard sauce on the pickled side of toasted bread.
Remove burgers from the grill and place on bread slices with the pickles and homemade mustard sauce. Place remaining slices on top, cut in diagonal, and serve with chips or fries. Read
